Grandma Mary's Pistachio Salad Recipe


Secretly planning to have the whole fam damily over for a birthday celebration for my husband. His grandma used to make this pistachio salad that he just loved. Not my favorite but I usually have a little. I'm sure you've had it before it is light green and fluffy with miscellaneous chunks in it. I asked my step-mother-in-law to make it for that day. Here's the recipe in case somebody out there wants it.

1 can crushed pineapple with juice
1 package pistachio instant pudding
9 ounce Cool Whip
1/2 cup walnuts (chopped?)

Combine pineapple and pudding mix. Fold in Cool Whip and walnuts.

The other variation is adding tiny marshmallows, Grandma Mary did not though.

I know it's a weird thing. My mother would never make or buy this for us. If my husband didn't love it for the fond memories of his Grandmother and it wasn't his birthday I wouldn't bother with it. I am also making barbecued turkey legs, salad, moms bringing homemade Hellman's potato salad. Still not sure about dessert yet. We'll see?

Hmmm, I would have guessed that pistachio salad was a dessert. I guess you need a selection so there's something for everyone, though. When I lived in Michigan I noticed a lot of dishes unfamiliar to me involving jello, cool whip, pudding, canned fruit, that kind of thing. It must be a midwest tradition?

Yes Berrybird, I know what you mean about using packaged foods in recipes like that. I do not cook like that but notice that being popular especially in "the country."
I did not grow up like that but my husbands family does especially the older generations. Not sure why some people love it so much. I like to cook with real food that's fresh. Ever notice how people always mention when they use a branded product in a recipe? It's kinda funny. "There is Campbell's Cream of Chicken Soup in this." Hee! Hee! Am I supposed to be impressed cause you didn't use fresh chicken, cream, and seasonings or because it was cheap and simple?
